Egg Fried Rice






Why overnight rice? It’s true that nothing is better than freshly cook rice— it’s fluffy, steamy and sticky and it goes well with all kinds of sauced dishes. But to acheive a nice egg fried rice, you would want to avoid that wonderful fluffiness, steamniess and stickiness because it prevent you from that dryness that you expected from a fried rice.

Do it the easy way: Heat your pan up and add in a generous amount of oil, wait till there’s smoke coming up from the pan. A HOT pan is a guarentee for a yummy golden omlette. Beat your eggs and add a pinch of salt. Pour the mixture in the hot pan and wait till the liquid is solidified. Remove your egg in a plate and add the overnight rice in the same pan. Keep smashing and stirring your rice until every grain is seperated. Put back the egg in the pan, chop the egg into small pieces with your spatula and begin to mix! Add in a pinch of salt, black pepper and a tiny little bit of MSG(not too much or else you’ll get really thirsty after the fried rice). Stir, stir, stir and sprinkle some chopped green onion on top and there you have it, a simple yet flavourful golden fried rice.
