Dumpling with pork and corn filling











Prepare a ginger spring onion infusion: Slice some ginger and spring onion and put them in a little bowl of cool water (put in a few Sichuan pepper grain if you have, they make the filling yummier). Reste the infusion for a bit before using. This infusion is for eliminate the smell of pork and make the dumpling more juicy.

Filling: Put the minced pork in a huge bowl. Add in corn, chopped carrot, an egg, soja sauce, oyster sauce and sugar. Stir to mix the filling and add in the infusion little by little utill the mixture becomes sticky but not watery (you don’t have to add in the whole infusion). Once done, you can start to make the dumpling.

Fold your dumplings

Dipping: Black vinegar is the most basic dipping for dumplings. You can add some soja sauce and chili sauce to bring out more flavour.

PS. You can add some minced shrimp in the filling, it makes the dumplings more flavourful.
